Soboro_Don

‘Soboro’ means crumbled meat. I cook this dish with Pork Mince, but you can use Chicken Mince. This is one of my family’s favourites and I cook it very often for our dinner. I sometimes add Firm Tofu to this dish, and increase the amount of seasonings. You might be interested in ‘Spicy Pork & Tofu Soboro Don’.

Ingredients

500g Pork Mince
1 tablespoon Oil
1 small piece Ginger *finely grated
Frozen Mixed Vegetables 2 cups *OR 1 large Carrot, 1-2 cups Peas and Corn Kernels
2 tablespoons Sugar
4 to 5 tablespoons Soy sauce
1 to 2 tablespoons Mirin
2 to 3 teaspoons Toban Djan (Chili Bean Sauce)
4 servings Cooked Rice

Method
  1. Heat Oil in a frying pan and cook Pork Mince and finely grated Ginger.
  2. When Pork changed colour, add Frozen Mixed Vegetables, Sugar, Mirin, Soy Sauce and Toban Djan, and cook until the sauce is almost gone.
  3. Half fill a bowl with freshly cooked rice and cover it with the meat mixture.
