
‘Spicy Pork Soboro Don’ is one of my family’s favourite dinner dishes. But I started adding Firm Tofu to increase the quantity, so that we can have it for lunch next day. The additional Firm Tofu makes the dish healthier, too.

Ingredients
500g Pork Mince
1 tablespoon Oil
1 small piece Ginger *finely grated
2 cups Frozen Mixed Vegetables *OR 1 large Carrot, 1-2 cups Peas and Corn
*Note: You can add other vegetables such as Spinach and Asian Mushrooms.
2 tablespoons Sugar
2 to 3 tablespoons Mirin
5 tablespoons Soy sauce
1 tablespoon Toban Djan (Chili Bean Sauce)
400 to 500g Firm Tofu *crumbled
Freshly Cooked Rice
Method
- Heat Oil in a large frying pan and cook Pork Mince and Ginger.
- When Pork changed colour, add Vegetables, Sugar, Mirin, Soy Sauce and Toban Djan, cover with a lid, and cook until vegetables are soft.
- Add crumbled Tofu, mix to combine, and cook until the sauce is almost gone, mixing occasionally. *Note: Add extra Sugar OR Soy Sauce if required.
- Half fill a bowl with freshly cooked rice and cover it with the mixture.
